Orecchiette with Romanesco broccoli, sausage and saffron

Ingredients for 4 people

  • 380g Canuti Orecchiette
  • 150g Romanesco broccoli
  • 120g sausage meat
  • 1 packet saffron
  • 1g saffron strands
  • 10g onion
  • 100ml white wine
  • 10g Pecorino Romano cheese
  • Extra virgin olive oil
  • Salt and pepper

Method

Sauté the chopped onion in a pan with a little extra virgin olive oil, add the sausage meat and cook for a few minutes. Moisten with the white wine and finally add the broccoli, previously blanched in boiling water. Add salt and pepper to taste.

Cook the CanutiOrecchiette in abundant boiling salted water, drain and toss with the sauce, and add the saffron, softened in a little boiling water.

Put the pasta on the serving dishes and garnish with saffron strands and a sprinkling of grated Pecorino Romano.
