Our pasta sheet is traditional Romagna-style pasta<\/strong>. It is naturally rough, like the hand-made one prepared by the pasta-making \u201csfogline\u201d of Rimini, also thanks to die extrusion<\/strong>.<\/div>\n

  • It retains all kinds of sauces and toppings<\/li>\n
  • It has the distinctive aroma of flour and eggs and a characteristic intense yellow colour<\/li>\n
  • It contains more than 5 eggs per kilo of flour<\/li>\n
  • It holds together well even some time after cooking<\/strong> or sauces or toppings being added.<\/li>\n<\/ul>\n<\/div>\n
    To make colour a feature, we use natural plant and meat ingredients such tomato, paprika, spinach, basil and cuttlefish ink \u2013 we never use artificial colourings.<\/div>\n

    For all short, long and filled pasta formats:<\/div>\n

    • We use the best Italian flours<\/strong>: soft wheat flour, obtained from the heart of the grain, stone-ground flour and durum wheat flour<\/li>\n
    • We use only top-quality barn eggs<\/strong>, processed in Italy<\/li>\n
    • We selectingredients<\/strong> that are GM-free, without ionising radiations, free from added preservatives and PDO certified<\/strong>, where possible.<\/li>\n<\/ul>\n<\/div>\n
      Starting with the careful selection of suppliers, \u201cle Classiche\u201d are made using ingredients that we check meticulously and use the same day<\/strong>. We prefer to purchase them whole and process them in our kitchen.<\/div>\n
